Homemade energy bars . . .

Any time spent with my beautiful Mother means dining with her in high and low brow restaurants, and her declaring, “Hmph!  I think I can make that.”  And after about 2 attempts, she can. 


I guess the apple doesn’t fall too far from the tree.

Today I tried homemade energy bars.  Because why not?  I like mid-day snacks and I don't like any of the energy bars of the grocery store shelves.

Start with any crunchy cereal of your choice. I used a flax cereal.  1 1/2 cups.  You also need 1 cup of cashews, almonds, and/or peanuts.  As a last minute decision, I added in a very small handful of cranberries.  You could also add in marshmallows, if you like.
                                                               
You will also need 1 cup of chocolate chips.  Line a baking tin or cookie sheet with parchment paper.                                       
Melt the chocolate chips.  I don't have a double boiler, so I melted them in the microwave.
Stir until you get a nice paste.

Add in the cereal and the nuts. Mix really well.
Spoon the mixture onto the cookie sheet.  Then pop it in the freezer or refrigerator for one hour.

Once done, break it apart.

Soooo yummy!  But I don't think all of this chocolate makes it "healthy".  Oh well.
